GRAVITY PROCESSING

VINEYARD: one of the white vines forgotten among our oldest vineyards.

HARVEST: manual in 15 kg boxes.

ELABORATION: selected on a double table (bunch and grain), macerated for 24 hours with their skins. Vertical pressing of the grapes and fermentation in stainless steel tanks and concrete eggs. Battonage for 6 months.

AGING: 14 months in 500 L and 225 L French oak barrels.

Straw yellow colour.

On the nose, its white flowers and stone fruit stand out, along with toasted and balsamic notes.

The palate is enveloping and silky, long, persistent and gastronomic, with good acidity.
