Pedro Ximenez Monteagudo
Pedro Ximenez Monteagudo is a wine made from grapes of the same name, previously dried in the sun, which gives it its special characteristics.
Oxidative ageing wine, obtained by the partial fermentation of previously raisined musts of the Pedro Ximénez variety. About 12 or 14 years of ageing using the soleras and criaderas system in American oak barrels.
Bright dark mahogany in colour, it has powerful hints of raisins, also highlighting liquorice, coffee and other raisin notes. On the palate it is very smooth, warm and sweet, with an excellent balance of acidity and sweetness that gives it great volume and persistence.
Many sommeliers say that Pedro Ximénez is not a dessert wine, but is the dessert itself. Perfect for dark chocolate, excellent with ice cream and very suggestive of its harmony with blue cheeses.
