Amontillado Moteagudo
Amontillado Monteagudo is the quintessence of biological ageing. A single glass of this wine sums up the almost 3 centuries of history of this winery. An experience not to be missed by any great fan.
A wine that is born as chamomile and therefore has a biological ageing in a first phase, but after losing the characteristic veil of flor it goes through a second stage, already oxidative. 100% Palomino variety, aged for about 12 or 14 years in American oak barrels, using the traditional system of soleras and criaderas.
Bright amber in colour, it has powerful notes of nuts and wood, especially almonds and hazelnuts. On the palate it is very dry and complex, standing out for its breadth and persistence.
Its complexity has solved some impossible pairings for sommeliers, such as artichokes, smoked artichokes or pickles. A glass of amontillado can turn a simple soup or consommé into a real gastronomic pleasure.
